As more and more people are becoming convinced that the climate is really changing, and quickly, we’re focused on the hope that organic agriculture offers. Here at Share we continue to assist our local farmers in extending the seasons and increasing genetic diversity by contracting for future crops. This is possible with your commitment to local organic eating. It provides farmers with an assured market for their produce. The Box Model – offering produce by the box – allows us to determine what we will order from the farms based on crop availability. We all eat green beans in July because the crop is ready!

Share Organics is ready to continue and expand this process and the local farmers are ready! First step is to expand our customer base so that we can increase our orders from the farmers. We hope to be able to offer at least two Island-grown products in each box this winter. When the crops start coming in May, we will be increasing the number of Island items. Meanwhile in your box you will find as much BC and Regional product that we can find supplemented by California and Mexican products to offer some variety. Certified organic of course!

Our best hope for spreading the word is you, our customers, so please encourage friends to take the plunge and buy a box!

What to make from this Week’s Box

  • Scalloped Potatoes
  • Greek Style Sunchokes
  • Apple Crisp
  • Banana Cinnamon Porridge
  • Broccoli and Tofu with Peanut Sauce
  • Salad with Avocado and Mandarins
  • Chard and Feta Quiche

Greek Style Sunchokes

Scrub and slice (no need to peel!):

2 cups (1/2 LB) Jerusalem artichokes

Mix together with the following:

1 cup tomato sauce

1 tbsp olive oil

1 tbsp fresh lemon juice

1/2 tsp dried tarragon, finely crumbled

1 tsp cane sugar

Refrigerate for a few hours or overnight in a glass bowl. Drain and transfer to a small oiled casserole. Bake uncovered at 350 until artichokes are tender (about 40 minutes).

Garnish with:

2 tablespoons chopped fresh parsley leaves

2 tablespoons toasted and ground hazelnuts

Serve as a side dish with rice or noodles.
